Pea soup
Ingredients
- Place all, bar the mint leaves, in a saucepan and bring to the boil. When you see bubbles, turn off the heat and add in the mint. Whizz up with a blender.

- 250g of frozen peas,
- 500ml of veg stock,
- 2 chopped spring onions,
- 2 crushed cloves of garlic
- mint leaves.
