This dinner recipe is a perfect traybake option for when you don’t have much time. It’s meat-free so ideal for Meat-Freee Monday or if wanting to add some more vegetarian meals into your week.

Ingredients

  • 1kg of cherry tomatoes (4 packets)
  • 2 medium red onions
  • Olive oil
  • Balsamic vinegar
  • Boursin cheese (or a block of feta)

Directions

  • Chop the onions in quarters and add to a bowl with the tomatoes. Pour over some olive oil and balsamic vinegar. Mix and spread the vegetables across an ovenproof dish.
  • Place the boursin cheese or block of feta at the centre of the veg.
  • Bake at 200 degrees for 40 minutes.
  • About 25 minutes in, cook about 300g lentil/ chickpea pasta.
  • When the pasta is cooked, mix it in with the tomatoes, onion and cheese so that it’s evenly covered.
