These are my absolute favourite. I’ve been making them for years, since I lived with my sister and we used to make them in bulk! They’re delicious to taste, and high in fibre (plant based!). They’re a great snack choice as they will keep your gut moving and satisfy your sweet tooth. Lots of clients tell me they’ve helped significantly reduce their intake of chocolate, cake and biscuits. - 1 mug Brazil nuts (200g)
- 2 mugs of dates (400g)
- 4 tbsp cocoa powder
- 2tbsp peanut butter
- 2tbsp chia seeds
- 2 tbsp coconut oil
How to make them
- Put into a food processor. Blend well. Then roll pinches of mixture into balls. Store them in the fridge in a lunch box.
- You can also flatten the mixture into a baking tray covered in parchment. Use a rolling pin to flatten the mixture so it’s smooth. Then place in the fridge for an hour. After an hour you’ll be able to cut them into squares and transfer to an air tight container. This is quicker than rolling into balls!
- If you have high cholesterol, switch the coconut oil to peanut butter (so 4 tbsp peanut butter in total).
