I love this quick lunch option. So easy to make and suitable for everyone in my family. To choose a high fibre wrap, pick one that has greater than 6 grams of fibre per 100 grams. These details will be printed on the back of the pack under Nutritional Information.
What you’ll need
- 1 wholegrain wrap
- 3 eggs, whisked lightly
- 25 grams of grated cheese
- 1 large tomato, sliced
How to make it
- Get an oven proof dish. Place the chopped tomatoes on the wrap.
- Pour the whisked eggs on top and sprinkle on some cheese.
- Place into a preheated oven at 180C for 20 minutes.
- Once the egg is firm it’s done!
- Lovely with chilli flakes on top, and a side of tomato relish 🙂
