I love this quick lunch option. So easy to make and suitable for everyone in my family. To choose a high fibre wrap, pick one that has greater than 6 grams of fibre per 100 grams. These details will be printed on the back of the pack under Nutritional Information.

What you’ll need

  • 1 wholegrain wrap
  • 3 eggs, whisked lightly
  • 25 grams of grated cheese
  • 1 large tomato, sliced

How to make it

  • Get an oven proof dish. Place the chopped tomatoes on the wrap.
  • Pour the whisked eggs on top and sprinkle on some cheese.
  • Place into a preheated oven at 180C for 20 minutes.
  • Once the egg is firm it’s done!
  • Lovely with chilli flakes on top, and a side of tomato relish 🙂
