A lovely, quick dinner. Perfect for a Friday night fake-away. Leave out the spices if feeding to kids that are selective about food choice. I love leaving out the toppings for them to try themselves. My kids surprised me recently when we were out for dinner and they both order the beef burger with caramlized apple and camembert. I mean, it was delicious, and was thrilled by how adventurous they were. It really opened their minds up to the importance opf toppings on burgers and as a result we’ve had fun with the combinations since. Please see below for guidance.

Ingredients

  • 2 slices bread (blitz in a bullet or processor)
  • 5 tbsp sesame seeds (some calcium!)
  • Cjun spices
  • 2 eggs, whisked
  • Chicken/ fish filles

How to make it

  • After you blitz the bread in a bullet, add in the sesame seeds and spices.
  • Put the mixture on a plate.
  • Whisk 2 eggs in a bowl
  • Dip the chicken or fish in the egg, roll in the crumb mixture, spray with oil and bake on a baking tray (15 min for the fish, 20-25 min for the chicken) at 200 degrees C.
  • To make the best burger, you need the following;
    • Sweet: e.g. caramelized onion, caramelized onion, brioche bun, pineapple
    • Salty: e.g. cheese, bacon (not an every day food but a sometimes one)
    • Sour: e.g. pickles, mustard, pickled onion
    • Bitter: e.g. rocket
    • Unami: e.g. large flat mushrooms, bacon (not an every day food but a sometimes one), aged cheese – I love camembert, goat’s cheese, or blue cheese
    • Spicy: e.g. harissa, jalapenos, chilli flakes
