Probably not what I should be calling them. But lets call a spade a spade, they’ll make you go (great for constipation or slow gut transit). They can be a great gluten free option if you use gluten free oats (coeliac friendly), or a low FODMAP option if using regular oats (change to raisins if needed). With the oats, linseed and olive oil they could be classifiable as a heart healthy option too.
Ingredients
- 3 cups oats
- 1 cup whole linseeds
- 1 cup chopped prunes
- 1/2 cup brown sugar
- 1/2 cup extra virgin olive oil
- 1/2 cup water
- 3 eggs
- 1 tsp vanilla extract
- 1 heaped tsp cinnamon (or more!)
How to make them
- Mix everything together.
- Place into a deep square oven proof dish (I line with greaseproof paper).
- Bale at 180 degrees celcius for 40 minutes. Allow then to cool for 10 minutes before slicing into squares. But, allow them to finish cooling before removing from the oven proof dish.
- Store in an airtight container.
