It’s safe to say, lunch can be an awful pain. Knowing what you want to eat is one thing, but having it in the house is another. This is why I love the simplicity of this meal. It’s also an affordable, nutritious choice (lots of nutrients here including iron, vitamin B12 and calcium). Simply perfect for cold days to warm you up. High in protein and fibre, it’s an all in one meal.

Ingredients

  • 200g tin baked beans
  • 2 eggs
  • 25g cheddar (a sprinkling)
  • Some chilli flakes

How to make it

In an oven proof dish pour a tin of baked beans. Cracks two eggs on top. Sprinkle with cheese and chilli flakes. Bake at 180 for 15 min (maybe more if you don’t like runny eggs). If hungry, a wholegrain pita is a perfect dipping tool that seconds as a fork/ spoon! Enjoy!
