If you’re following a gluten free diet due to coeliac disease or non coeliac gluten sensitivity, you’ll be fully aware how horrible most bread is! This is what leads me into the kitchen at night times baking, and trying new recipes. I have finally settled on a lovely gluten free soda bread which is as nice as the breads I used to enjoy.

Ingredients

  • 250g gluten free oat flour (blitz 250g oats in a blender),
  • 200g gluten free oats,
  • 2 tsp baking soda,
  • a little salt,
  • 450ml buttermilk,
  • 3.5 tbsp of apple cider vinegar.

How to make it;

  • Add the 250g oats to your blender to make the oat flour. With a nutribullet, this is the max you can put in, which is a happy coincidence!
  • The pour the oat flour inot a bowl and add 200g of gluten free oats, the baking soda and salt. Mix everything together.
  • Now measure out the buttermilk and add the apple cider vinegar into that jug. Mix and pour into the glour.
  • Mix everything together and transfer to a greased 2lb bread tin.
  • Bake in a preheated oven for 45 min at 190 degrees C.
  • Remove from the bread tin using oven gloves. When done it’ll sound hollow when you tap the bread on the bottom of the loaf. Cool on a wire rack before eating.
