I was pleasantly surprised by how nice this was. It gives off salted caramel vibes.

This is is tasty protein based snack that’s perfect for summer time and those with PCOS and osteopenia. It’s also a terrific choice if perimenopausal or on a weight loss diet.

Ingredients

  • 1 pot cottage cheese
  • 6 dates

How to make it

  • Soak your dates in hot water for 15 minutes. You’ll need less dates if you’re using medjool dates and they won’t need to be soaked!
  • Blitz the cottage cheese with the dates.
  • Pour into 2 small dishes.
  • You can sprinkle them with dessicated coconut so that they look prettier. I sometimes add cinnamon as it tastes lovely and is great for yout (e.g. metabolically, if you have PCOS).
  • Please do add some honey if you like things sweet!
  • Freeze and eat!
