This is a delicious breakfast. We make it over and over and over again. With 3 different fruits, and no refined sugars, it’s an every day sort of breakfast.

It serves 6 people.

Ingredients

  • A few pears
  • 1/2 bag of frozen cherries
  • 2 bananas
  • 2 medium eggs
  • A drop of vanilla extract
  • 250ml milk
  • 350g self raising flour
  • 1 tsp baking powder

How to make it

  • Layer a baking tray with sliced pear and throw the cherries in on top.
  • Blend the ripe bananas, eggs, vanilla extract and milk.
  • Sieve in the flour and baking powder.
  • Pout the batter on top of the fruit and sprinkle on some flaked almonds.
  • Bake for 40 minutes at 180 degrees celcius until the batter is cooked. How you know is that the centre of the dish isn’t soft when you press your finger down on it.
  • I like it with some high protein yoghurt. A drizzle of honey is optional!
